· 1,250 gr of pork loin
· 250 gr of coarse salt
· 125 gr. sugar
· 10 gr of dried thyme
· 2 large mangoes, not very ripe
· 2 chives
· 2 seedless cayenne peppers
· 1 tablespoon sherry vinegar
· 10 cl of AOVE
Step 1. We clean the steak of fat and fiber. We cover it with salt, sugar, and dried thyme well mixed. We will keep it in brine for 45 minutes.
Step 2. We clean the mangoes. We peel and bone them. We cut them into small pieces and mix them with the julienned onion.
Step 3. After 45 minutes we clean our steak under tap water. We dry it with a cloth and keep the meat in a warm area to facilitate its cooking.
Step 4. Brown the meat in a frying pan little by little until golden brown. We will finish it in the oven preheated to 180º C, for 35 minutes. We the meat´s temperature must be of 58ºC.
Step 5. We prepare the mango with the spring onion, with a tablespoon of oil and the cayenne we will give it a quick sauté in a pan, we will put it to the point of salt, and we will give it the acid touch with our sherry vinegar. We set aside.
• At the bottom of the plate, we put a little mango, a piece of chop with its bone on top. We decorate it with a fresh thyme and a little coarse salt.
