STURGEON

The sturgeon is one of the star fish of the territory of Poniente Granada, and that both the locals and all those who come to visit the interior of Granada appreciate it gastronomically.

And it is undoubtedly known as ‘black gold’, sturgeon caviar, the one that has the most success in restaurant tables, and that in any dish shows its exquisite flavor and texture when we taste it. A product that is one hundred percent ecological, since the waters in which it grows are not treated. Little by little, it was introduced into the fish farms in the area until obtaining a caviar that has nothing to envy those that come from other remote countries such as Russia or Iran.

Around 20,000 sturgeons are bred in the Granada province, in a process that lasts several years until the fish arrives at stage of maturity. It’s not a coincidence that, from year 2,001, the caviar of Riofrio is the first brand that had the ecological seal from all around the world.
