In different recipes the artichoke has a great gastronomic value and there are many uses that can be given to it in the kitchen. And if we want a variety with flavor and quality, we find it exactly in Granada’s Poniente, in the town of Zafarraya. As a matter of fact, the only town in all of Spain that produces artichoke during the summer season, within an area of 2,000 hectares that are dedicated to its cultivation in Andalusia, being the third producing community behind Murcia and Valencia.
It contributes to its quality, the weather conditions of the area, with fresh and humid summers. The production of the artichoke begins at the end of May, and it extends until the autumn, approximately for the month of October. It is estimated that its production reaches 2,000 tons.
