· Segureño Lamb Chops
· 4 or 5 potatoes
· 1 red pepper
· 2 or 3 ripe tomatoes
· 1 onion
· 4 garlic cloves
· Extra virgin olive oil
· 4 laurel leaves
· Salt
· Pepper
· Fresh thyme
Step 1. Season the chops
Step 2. Cut the onion into julienne into strips of 1 cm.
Step 3. Cut the potatoes into rounds around 1 cm, then sautéed until golden and soft on each side and season to taste.
Step 4. Cut the tomatoes into thick slices of 1 cm.
Step 5. Cut the peppers into thick julienne strips of 1 cm.
Step 6. Place everything in the can, since it will be served in the can.
Step 7. Bake in the oven at 180º for 1h and 30’ and ready to eat.
