Step 5. Put in a bowl together with the eggs, a pinch of salt and beat everything together.
Step 6. In a frying pan, add a little extra virgin olive oil and add the whole mixture. We curdle on both sides.
The trick is to cook the tortilla of the Sacromonte in a small frying pan, as it must be tall and thick, so that the inside is very juicy.
