SACROMONTE TORTILLA

PREPARATION

Step 1. First, prepare the testicles, for that you have to remove the superficial nipple, and laminate the interior.

Step 2. We also laminate the brain.

Step 3. Dip in flour. Then, fry the brains

Step 4. Use a knife to chop them finely.

Step 5. Put in a bowl together with the eggs, a pinch of salt and beat everything together.

Step 6. In a frying pan, add a little extra virgin olive oil and add the whole mixture. We curdle on both sides.

The trick is to cook the tortilla of the Sacromonte in a small frying pan, as it must be tall and thick, so that the inside is very juicy.

PLATING

• We cut it and serve it with some salaillas, typical bread of Granada.
