WHITE PIG

As they say, “we like pigs up to our gaits”, and this expression comes in handy if we talk about the white pig that is raised in the Vega de Granada region. In the scale of consumer preferences, the pork is settled in the first place, a great distance from the rest of the meats. Pork is pink, tender, and fine-grained.

The quality of the meat of white pig depends on its organoleptic properties: flavor, tenderness, scent, and color. Being the same for the different parts of the same animal and varying according to age, breed, sex, and breeding conditions. Although in Granada the white pig also has name, San Pascual, mixture of races of the pig retinto Duroc and the Landrace white has been in an excellent product of great quality that gives the pigs of white layer only graining the meat with a flavor, aroma, tenderness, and juiciness that makes them special and all of this, thanks to a traditional diet, chemical-free and a philosophy of being pampered and peacefulness in the activity.

Shedule: At the end of January, in the middle of the winter, Armilla hosts the Festival of Slaughter and Must, in which it pays tribute to the ancestral production of products derived from pork, such as its sausages. The program is completed with tastings and musical performances in the Plaza de España.
